Using custom fields you can add fields but not delete the exisiting fields.
I would also like to change the name of the field
example: Title - Article name
Category
Message: change to Description
Delete: Tags
Take out some of the additional options.

There's an option to delete any custom fields in the Admin CP, right next to the [Edit] link.
I'm sorry, but I don't think I'm following you with the rest of your post.

I need to delete some of the default fields that came up as standard.

Uhhh... What fields exactly? There should not be any custom fields added by default.

I don't want any default fields and would like to start from
adding Title
Message
and only others required.
Now I have Date Posted??
tags???
Some in advanced options.

The 'Entry Date' field only shows up for those who have permission to modify an entry date. If you don't want that to be displayed, you would need to edit your vBa Dynamics usergroup permissions and set the 'Can Modify Entries Date' option to 'No'.
Tags can be disabled by going to Admin CP => vBa Dynamics => Modify Settings => Add/Edit Entries Options => Allow Tags (keywords)
